The Cultivated Blueprint

One menu, built together.
One night only.

Five courses written together by our kitchen and a guest chef, poured alongside, and served once — to a room of thirty. When it's gone, it's gone. The menu is never repeated.

The Evening

A menu that exists for a single night

Each seating starts as a conversation between our kitchen and a guest chef — and ends as five courses that will never be served together again.

Close-up of a finished course at the pass — sliced seared duck on a dark ceramic plate with purée, hazelnuts and a blackberry, as a chef's hands finish it with tweezers placing a microgreen garnish, steam rising in a dark, warm kitchen

A menu built by two chefs, for one night only

Every seating pairs our kitchen with a guest chef. Together they build the menu from scratch — arguing, tasting, and refining until five courses read like a single voice.

Nothing is pulled from a standing menu. What you eat that night was written for that night, for that room, for those thirty seats.

  • A new collaboration every seating — a different guest chef, a different point of view.
  • The full menu arrives with the alert, ten days ahead — read it before you decide to claim a seat.
Just-harvested potatoes, rainbow carrots, turnips, cabbages and herbs laid out on a farm table

Farm first, always

The cooking is farm-to-table in the truest sense: the produce leads, and the menu bends around what's coming out of the ground that week. If it isn't in season, it isn't on the plate.

The one exception is the proteins, sourced for quality first — everything around them is grown close and picked close to service.

"We cook what the farm gives us. The farm rarely disappoints."

Poured to match

Each course arrives with a wine chosen for that plate — not a list, a pairing. Five courses, five pours, sequenced to build across the evening.

Don't drink? Every seat can choose the non-alcoholic pairing instead — built with the same care, course by course. It's the one substitution we make, and we make it gladly. Just choose it when you claim your seat.

  • Wine pairing included in the rhythm of the menu.
  • Non-alcoholic pairing available for any seat, chosen at claim time.

How Seats Work

First thirty. Plain and simple.

No schedule, no season tickets, no insiders. The list hears first, and the quickest thirty sit down.

Until 30 are gone

What's inside every alert

An alert is the whole invitation, not a teaser. Read the menu closely before you claim — the courses are served exactly as written, so the menu is how you know the night is for you.

  • The guest chef — who is cooking alongside us that night.
  • The time — one seating, one start, doors and first course.
  • The location — where the room is set for that night.
  • The menu — all five courses and the pairings, in full.
  • A live countdown — and the claim link, open until 30 seats are gone.

Seatings happen when they're ready — never on a fixed schedule. The list is the only door. You might catch the next one, or miss three in a row because thirty people were faster. That's the deal, and it's the same deal for everyone.

When the Alert Lands

Claiming a seat, step by step

Claiming opens the moment the alert goes out. Here's exactly what it asks for — nothing more.

What the claim asks

Choose your seats, pick a pairing for each guest, and — only if it applies — note that seat's allergies or dietary needs, with time for the kitchen to act on them. Then checkout at $175++ per seat.

Every seat is set on its own. One guest can take the wine pairing while another takes the non-alcoholic, and each seat's dietary notes sit with that seat — so nothing has to be sorted out at the table. Every per-seat field is optional: if a seat has nothing to note, leave it blank and move on to the next.

Allergies and dietary needs are accommodated only when told to us more than 48 hours before the seating — counted from the night of service. Inside 48 hours, or on the night itself, nothing can be changed and there is no night-of accommodation. Beyond that, there are no substitutions — the non-alcoholic pairing is the one exception.

Checkout activates with the alert. This panel mirrors the live claim, so you know the drill before the countdown starts.

After you claim

Your confirmation goes out right away, the way you chose on the list — text, email, or both — with a link to add the night to your calendar.

The Cultivated Blueprint — you're confirmed. Your seats are held, and your pairings are noted per seat: 2 wine, 0 non-alcoholic. Per seat: Seat 1 — wine; Seat 2 — wine. Anything you told us about allergies (48+ hours ahead) is with the kitchen. Full details, directions, and your add-to-calendar link are in the message.

Sample confirmation wording — the live version carries your seating's date, time, location, and calendar link.

  • Add to calendar — a Google Calendar link plus a downloadable calendar file, in every confirmation.
  • Missed the 30? You're on that night's waitlist — if a seat opens, it goes to the waitlist in order.
  • Plans change? Cancel more than 48 hours before the seating for a full refund. Inside 48 hours, seats are non-refundable.

Good to Know

The house rules, in plain language

Thirty seats and a single-night menu leave no room for improvisation on the night. These rules are how the evening stays what it is.

The menu is served as written

Each seating is coursed out and pre-planned together, course by course. There are no substitutions — nothing taken off a plate, nothing added on. It's how five courses land the way they were designed to.

The single exception: guests who don't drink alcohol may choose the non-alcoholic pairing when they claim.

Allergies need 48 hours' notice

Tell us about an allergy or dietary restriction more than 48 hours before the seating — there's a field for it on each seat, right in the claim — and the kitchen can plan around it.

Inside 48 hours, or on the night of service itself, we can't accommodate it. With no notice, there's nothing we can do — the menu is already set and sourced.

Cancellations & refunds

Cancel more than 48 hours before the seating and you receive a full refund.

Cancel less than 48 hours before and there is no refund — your seats were held, the food was sourced, and the night can't be resold in time.

No set schedule, thirty seats

Seatings are announced as they're ready. Every alert goes to the whole list at once, ten days out, with a live countdown.

First 30 to claim and pay are seated. After that, the waitlist — and the next seating — is all there is.

Questions

Before you ask

How much is a seat, exactly?

$175++ per seat. The “++” means tax and gratuity are added on top at checkout. Five courses and the pairing are included in the seat price.

How will I know when a seating is announced?

Join the alert list and choose text, email, or both. Ten days before the seating, the alert goes out to everyone on the list with the guest chef, time, location, full menu, and a countdown to the night. Claiming opens with that alert.

What if I miss out on the 30 seats?

You land on that seating's waitlist, in order — if a confirmed guest cancels in time, the seat is offered down the list. Otherwise, your alert-list spot carries over and you're in the running for the next seating, same as everyone.

Can the kitchen work around my allergy?

Yes — if we know more than 48 hours before the seating. Note it on that seat in the claim form — each seat has its own optional dietary field — and the kitchen plans around it. Inside 48 hours, or on the night itself, the menu is set and we can't change it. Beyond allergies, there are no substitutions: dishes are served as written, with a non-alcoholic pairing as the one exception for guests who don't drink.

What's the refund policy?

Cancel more than 48 hours before the seating for a full refund. Cancel less than 48 hours before and there is no refund.
